Coarse ground pieces of roasted wattleseed have a wonderful hazlenut, coffee or chocolate scent and flavour. Wattleseeds have only recently come to prominence in culinary applications but they are a fantastic ingredient that will hopefully become more widely known. The wattleseeds have great nutritional benefits and have been enjoyed by aboriginals for many centuries. The harvest of the pods before roasting and grinding is extremely labour intensive and the crop is collected from the wild, leading to a high price but as the flavour is intense a little goes a long way.

uses: The nutty slightly bitter chocolate flavour of wattleseed complements many desserts, particularly anything with cream or yoghurt. The wattleseeds are also a great flavouring for roast meats particularly lamb or beef. They are also often used in drinks and complement coffee well. Mix the wattleseeds with a splash of hot water to make a paste then add this to your chosen dish as the flavour is enhanced and the grains softened using this method.
