Long, moist oily vanilla pods grown in an area reputed to give the highest levels of the essential oil vanillin, of any growing area in the world. The vanilla pods don't have the very sweet scent of Madagascan vanilla but give a great flavour and have a huge number of oily seeds hidden in the thick flesh. The vanilla pods are packed in resealable bags but the moist pods will dry out quickly in a hot kitchen and lose alot of their flavour, so unless they are to be used immediately, store in an airtight container away from extreme light and heat.

uses: Desserts, pastry or savoury marinades. The Indian vanilla pods are particularly suited to a savoury application such as a marinade.
