Tahitian vanilla doesn't have as high levels of vanillin as bourbon vanilla but has an interesting floral, slightly liquorice flavour. Produced in fairly small quantites, the vanilla pods are smaller than bourbon vanilla pods but offer an interesting alternative for an adventurous cook.
