A unique flavour and scent, delicious in small quantities. Used in Chinese cooking, whether in marinades, stocks, dry seasonings or sauces. The berries are from the prickly ash tree and have a numbing, sour, almost citrus or redcurrant flavour and a woody, warm scent. Szechuan pepper is an important element of five-spice powder and adds a lift and biting citrus flavour to roast meats.

uses: Crush and use in marinades or seasonings for roast meats, particularly duck or pork.
