Strongly scented, dried mint is a useful substitute for the fresh herb. As a rule, the stronger dried leaves aren't as good when the leaves are used raw but give a great flavour when added to a hot dish.

uses: Add a pinch to the cooking water for potatoes or green vegetables. Use in a seasoning for lamb with salt, pepper and garlic. Add just before serving to rice, couscous or pulses to give a fresh fragrance to the dish.
