Elderflower is a delicate, beautifully floral flavour, historically popular in English country cooking as the fresh elderflowers can be collected easily from the wild. The dried elderflowers give a really convenient way of incorporating the scent and flavour of elderflower into your food. They also make a stunning, delicate herbal tea infusion.

uses: Infuse in a syrup, particularly good to serve with fruit salads or to poach the fruit in. Add to the cooking liquid for a poached chicken.
