A popular flavouring in China and to a lesser extent Korea and Japan, an infusion is made from the dried flowers for a refreshing hot tea or sweetened cold drink. The flower petals are also scattered over the surface of a hot soup before serving to give a beautiful fragrance and flavour. Lengthy cooking will turn the flavour bitter so the flowers are best used just before serving.
