A
Lebanese or Syrian blend, za'atar is sometimes used as a word
to describe a native wild herb related to thyme as well as
this blend based on the flavours of thyme and sumac. The flavour
of za'atar is at once, herbal, tangy and nutty. The za'atar
mix is traditionally used to top flatbread with olive oil
and then toasted where the scent of the thyme and the salty,
lemon flavour of sumac is delicious. The mix also really complements
carbohydrates, pulses or used as a general seasoning.

Sprinkle za'atar over pita or any flatbread with a little
olive oil before baking or toasting - a great snack, especially
at breakfast! Use as a seasoning for salads, tomatoes, sprinkle
za'atar over cheeses - feta, mozzarella or goats cheese -
best if fried in oil first then poured over to get the most
from the thyme. Season fillets of fish or chicken before grilling,
baking or roasting. Stir za'atar into mashed potato, bread
mixes, chickpeas or rice. Use as a non-spicy seasoning for
barbequed meats or vegetables. Mix with a little olive oil
and use as a dip.
