Mix
the spices with 8 tablespoons of cold water and 8 tablespoons
of white wine vinegar. It will look fairly runny but stir
well, cover and leave in a cool place - not the fridge, for
a couple of days. This allows the seeds to absorb the liquid
and the flavour to develop. Experiment by replacing the water
with wine, beer or add chilli, garlic, herbs or honey.
