Useful
for curry, cardamon masala adds a fresh aroma and heat to
the finished dish when added just before serving. The mix
does not have the 'earthy' scent and flavour of curry spices
like fenugreek or cumin, rather a sweet and aromatic mix with
a subtle heat that enhances the flavours already present in
a curry. The blend is also good in many other dishes where
a subtle spiciness is required such as a soup or as a seasoning
for fish.

Add to a curry, soup or stew. Use to season chicken, lamb,
fish with a pinch of salt and a squeeze of lemon if possible.
